One Pot Meal : A Spicy Brinjal Rice dish : Vangi Bhaat

Posted by in One Pot Meal, Vegan, Vegetables

Aubergine or eggplant is known as baingan in Hindi. Apparently a king, bored with the vegetable called it be-gun or without any properties of its own. I disagree, I find it a very versatile vegetable. My kitchen garden has gifted me with a huge crop of the eggplant. It is a very popular dish and there are many variations. This is the recipe my mother used and it turns out very tasty. First of all one has to make the vangi bhaat masala   Of course you can buy this…read more

Sago pearls (Sabudana) khichdi

Posted by in Breakfast, Dinner, Healthy Living, One Pot Meal, Paleo, Vegan

I am currently having a love-hate relationship with my diet.  I love the health benefits I am getting and I hate the diet because there are so little options.  Today I did not want to look at cheese or chicken.  So monotonous. I was out of buckwheat flour. I had a packet of sago in the cupboard.  Danced a happy jig and then went online to check if it was paleo. What is sago or tapioca? Prawn and vegetable pilaf

I love seafood.  May be it is because we in Delhi NCR live in a land locked area.  Prawns are delightful and they cook so easy. The son bought us a packet of prawns.  They were huge and looked awesome.  I had already planned to make a beans and mushroom pilaf so I adjusted my recipe to add prawns.  The end result was delicious.  It was easy because prawns require about 15 minutes to half an hour of marination. Ingredients : For Marination: Prawn /Shrimp —  1 packet Ginger Garlic …read more

Egg and Vegetable bake

Posted by in Egg, One Pot Meal

This is an ideal one pot meal for days when one does not feel like cooking dinner. I had some baked baby potatoes and just threw in two florets of broccoli, some zucchini, capsicum and tomato to the mix.  The Italian spices, the cheese, zucchini and tomato gave it a very summery taste.  I once had an Italian boyfriend and he found this the perfect comfort food for after a long intimate encounter.  I like it anytime, I really do.  It does not have to be just after sex.  He…read more

Chili from scratch

Posted by in Lunch, Mexican, Mutton, One Pot Meal

I’ve always thought that combining beans with mince is sacrilege, blame it on the fact that we like to have our rajmah without any additions. Chili tastes good, but it is mild for our palate. So I decided to cook it at home – kind of spice it up. I soaked some beans overnight and boiled them in a pressure cooker the next morning. And then I nearly gave into the temptation to make rajmah with chawal and green chutney. That is the strong call of Punjabi genes and comfort…read more
