Aren’t mangoes absolutely delicious?  I think it’s Nature’s way of compensating us for the horribly hot summers we have in India.  I use them in a lot of things, but the best is baking a chunky mango cake.  I baked one this Sunday. I actually wanted to make strawberry ice cream, but then I had a bottle of brandy left over from the winter.  Combining brandy and ice cream was a tempting thought.  I always give in to temptation. 🙂 It is low on milk and that is good, since son junior is lactose intolerant.  And the best part is it needs just four ingredients.  And an electric blender.
