Gluten Free Paleo Rice
We are on a fast here in India. The ancients, in their wisdom decreed that the devout would go for a bi-annual cleansing in this country, so we have the Navratri fasts where people eschew grains. The spin off is that we have many mock-grains which serve us during those days. For a person on a paleo diet like me, this opportunity is heaven sent to stock up on these grains.
One of these mock grains is Sama Rice or LittleMillet. All varieties of millet are gluten-free and high in iron, potassium, magnesium, calcium, and zinc. Millet is also rich in B Vitamins– especially B3 (Niacin), B6 (Pyridoxine), and B9 (Folic Acid). They are paleo friendly grains.
These tiny ivory coloured grains which are cooked just like rice.
This millet is de-husked and sold as rice substitute. It is gluten free and safe to eat.
Boil one cup of Sama with 3 cups of water for a rice substitute.
I cooked coconut sama rice today
- Foxtail Millet : 1 cup
- Coconut Milk : 1 cup
- Water : 2 cup
- Salt : 1 teaspoon
- Wash the millet, add both coconut milk and water.
- Boil till softened.
- I added some coriander and peas to my rice, that is optional
- When the Little Millet is done, there may be some water left. Leave it covered and the millet will absorb it.
